You cannot learn to become a chef from a classroom alone. At ICAHS, students combine structured culinary education with hands-on kitchen training throughout the program. From the second month, students begin gaining experience in a real hospitality environment. By month five, they progress into a full kitchen practicum

Build the foundations every professional chef needs: culinary terminology, food safety and sanitation, kitchen mathematics, measurements, recipe costing and the principles of working in a professional kitchen.
Develop essential knowledge and skills: product identification, ingredients, kitchen tools, knife skills, freshness and storage, flavour profiles and the building blocks behind great cooking
Turn knowledge into cooking through practical work in butchery, stocks, sauces, soups, vegetables, starches, salads and professional cooking methods including grilling, roasting, braising and poaching.
Bring everything together through food presentation, plating and professional kitchen execution while applying the techniques learned throughout the program.
ICAHS is based within the environment of Atmosphere Resorts & Spa in Dauin, Negros Oriental. Students are exposed to real hospitality operations and the professional standards expected within a luxury resort.
The transition from learning to working therefore starts much earlier.

Do not wait until graduation to experience the industry.
From the second month of the program, students begin an Early-Stage Practicum, working in a real hospitality environment twice each week. Students complete approximately 100 hours of practicum experience before reaching the halfway point of the program. In month five, students progress to their Full Kitchen Practicum, ultimately completing 500 hours of practical kitchen experience.
By the end of the program, students have not simply studied professional kitchens. They have worked in one.

ICAHS is based in Dauin, Negros Oriental - a relaxed coastal community surrounded by some of the Philippines’ most beautiful natural environments.
